Simple Ground Beef Recipes
Since when did the word 'simple' in a recipe become a bad thing? Some people
feel like the food can only be good if it is complicated and takes hours to
prepare. I disagree. I think some of the best food - food that really satisfies,
is easy to prepare. Here are some simple ground beef recipes that back me up! Enjoy!
Hidden Beef Ring
Ingredients
- 1 pound ground beef
- 1 medium onion, chopped (about 1/2 cup)
- 3 tbsp catsup
- 2 tbsp prepared mustard
- 1 can (10 3/4 oz) condensed chicken gumbo soup
- 3 cups buttermilk baking mix
- 2/3 cup milk
- 2 tbsp margarine or butter, softened
- 2 eggs
Directions
- 1. Cook and stir ground beef and onion in 10-inch skillet until beef is brown; drain
- 2. Stir in catsup, mustard and soup.
- 3. Heat to boiling; reduce heat.
- 4. Simmer uncovered 5 minutes.
- 5. Heat oven to 375 degrees.
- 6. Generously grease 12-cup bundt cake pan.
- 7. Mix remaining ingredients: beat vigorously 30 seconds.
- 8. Spread 2 cups of the batter in bottom and about 2 inches up side and center of pan.
- 9. Spoon ground beef mixture evenly onto center of batter.
- 10. Drop remaining batter by teaspoonfuls about 1/2 inch apart onto ground beef mixture.
- 11. Bake until light brown and firm, about 25 minutes.
- 12. Invert on heatproof serving plate.
Stuffed Peppers
Ingredients
- 6 large green, red or yellow peppers
- 1 pound ground beef
- 2 tbsp chopped onion
- 1 cup cooked rice
- 1 tsp salt
- 1/8 tsp garlic salt
- 1 can (15 oz) tomato sauce
- 3/4 cup shredded mozzarella cheese
Directions
- 1. Cut thin slice from stem end of each pepper. Remove seeds and membranes. Rinse peppers,
- 2. Cook peppers in enough boiling water to cover for 5 minutes. Drain.
- 3. Cook and stir ground beef and onion in 10-inch skillet until beef is light brown; drain.
- 4. Stir in rice, garlic salt and 1 cup of the tomato sauce; heat through.
- 5. Stuff each pepper with beef mixture.
- 6. Stand upright in ungreased square baking dish, 8x8x2 inches
- 7. Pour remaining sauce over peppers.
- 8. Cover dish and bake in 350 degree oven 45 minutes.
- 9. Uncover and bake 15 minutes longer.
- 10. Sprinkle with cheese.
Bacon Cheeseburger Meatloaf
Ingredients
- 1 1/2 pounds 85%lean ground beef
- 1 cup Quaker quick or old fashioned oats, uncooked
- 1/4 cup finely chopped onion
- 1 egg, lightly beaten
- 1 (8 oz) can tomato sauce
- 1/2 tsp black pepper
- 8 (4- by 6-inch) slices Cheddar cheese
- 8 strips thick-sliced bacon, crisply cooked
- 2 medium tomatoes, sliced
- 8 split hamburger buns
- 1/3 cup mayonnaise
- 2 tbsp ketchup
Directions
- 1. Heat the oven to 350 degrees.
- 2. Spray a 13x9 inch metal baking pan with cooking spray.
- 3. For meatloaf, combine beef, oats, onion, egg, tomato sauce, and pepper in large bowl
- 4. Mix lightly but thoroughly.
- 5. Press mixture evenly into pan.
- 6. Bake for 30 to 35 minutes or until meatloaf reaches medium doneness (160 degrees) and center is no longer pink.
- 7. Drain off any juices.
- 8. Heat broiler.
- 9. Make sauce by combining mayonnaise and ketchup.
- 10. Spread sauce over meatloaf, completely covering; cut meatloaf into 8 rectangles. Top each
rectangle with cheese, 2 half pieces of bacon and tomato slices.
- 11. Broil the meatloaf for 2 to 3 minutes or until the cheese melts.
- 12. Serve on buns.
Easy Hamburger Stew
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 1 small green pepper, chopped
- 2 Cup grated raw carrots
- 2 Cup grated raw potatoes
- 1 can cream of mushroom soup
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 cup water
- 3/4 cup crushed potato chips
Directions
- 1. Brown ground beef, onion, and green pepper. Drain.
- 2. Add carrots and potatoes and beef mixture back in pan. Stir until well blended.
- 3. Add salt and pepper and pour into baking dish.
- 4. Combine water and soup; pour over meat and vegetables, stirring slightly to combine.
- 5. Top with crushed chips.
- 6. Bake at 350 degrees for 35-40 minutes or until bubbly.
Easy Tamale Pie
Ingredients
- 1/2 lb ground beef
- 1/2 cup minced onion
- 2 tsp garlic powder
- 1 8 oz can tomato sauce
- 1/2 cup milk
- 1 egg, slightly beaten
- 1 t-oz can whole kernel corn
- 1/4 cup sliced olives
- 1/2 cup yellow cornmeal
- 1 tsp chili powder
- 1 tsp salt
Directions
- 1. Cook ground beef and onions with garlic powder until meat is brown
and onion is tender. Drain.
- 2. Stir in tomato sauce, milk, egg, corn, olives, cornmeal, chili powder,
and salt.
- 3. Spoon into an 8 x 8 square baking dish.
- 4. Bake at 350 degrees for 40-45 mintues. Knife inserted will come out clean.
- 5. Cut into squares and serve immediately.
