When the economy is bad, people start looking for ways to make their dollars go further. Instead of getting pre-made, pre-packaged foods, they blow the dust off their cookbooks or cruise the internet looking for a new and inexpensive recipe to try. One that won't take all night to make, that won't call for expensive ingredients and that there is a good chance there family will like. Hamburger is one of the most inexpensive meats you can use and it is a great source of protein (and you can really decrease the fat, just by draining the meat really well). Hamburger Cabbage Casserole

Ingredients

  • 1 pound ground beef
  • 1 large onion, chopped (1 cup)
  • 1/2 cup uncooked instant rice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 can (10 3/4 oz) condensed tomato soup
  • 1/4 cup water
  • 4 cups coleslaw mix or shredded cabbage

Directions

  • 1. Heat oven to 400 degrees.
  • 2. Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown, drain.
  • 3. Stir in rice, salt, pepper, soup, and water.
  • 4. Place coleslaw mix in ungreased 2 quart casserole.
  • 5. Spoon beef mixture over coleslaw mix.
  • 6. Cover and bake about 45 minutes or until hot and bubbly.

Moussaka Light

Ingredients

  • Olive oil nonstick cooking spray
  • 2 small eggplants(about 1 1/4 pounds each), cut lengthwise into 1/2 inch thick slices
  • 1 cup regular long grain rice
  • 12 oz lean ground beef
  • 1 jumbo onion (1 pound), diced
  • 4 garlic cloves, crushed with garlic press
  • 1 1/2 tsp salt
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1 can (28 oz) tomatoes in puree
  • 1/3 cup grated Parmesan cheese

Directions

  • 1. Preheat oven to 450 degrees. Spray large cookie sheet with olive oil cooking spray. Place eggplant slices on cookie sheet, overlapping slightly if necessary, and spray top side of slices. Bake eggplant 25 to 30 minutes, until soft and browned. Remove eggplant from oven; turn oven control to 375 degrees.
  • 2. While eggplant is cooking, prepare rice as label directs, but do not add salt, margarine or butter
  • 3. Heat nonstick 12-inch skillet over medium-high heat. Add ground beef, onion, and garlic, and cook until meat is browned, about 15 minutes. Stir in salt, cumin, and cinnamon; cook 2 minutes longer. Remove skillet from heat; stir in tomatoes with side of spoon. Transfer meat mixture to large bowl; stir in cooked rice.
  • 4. In shallow 2 1/2 quart casserole or glass baking dish, arrange half of eggplant slices, overlapping slices to fit if necessary. Top with half of meat mixture. Repeat with remaining eggplant slices and meat mixture.
  • 5. Cover casserole and bake 15 minutes. Uncover casserole; sprinkle with Parmesan cheese and bake, uncovered, 20 minutes longer or until filling is hot in the center and bubbling around the edges. Makes 8 servings.

Upside-Down Meat Pie

Ingredients

  • 1/2 lb ground beef
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 1 small carrot, grated
  • 1/4 cup chopped green pepper
  • 1/2 cup tomato sauce
  • 1 tsp mustard
  • 1 cup biscuit mix
  • 1/4 cup milk
  • 4 slices cheese

Directions

  • 1. In small skillet, brown beef. Drain.
  • 2. Add celery, onion, carrot, green pepper, and tomato sauce to beef in pan.
  • 3. Cook until vegetables are tender.
  • 4. Stir in mustard.
  • 5. In small bowl, combine biscuit mix and milk; knead and roll out into a circle.
  • 6. Spoon meat mixture into slightly greased pie plate; top with dough.
  • 7. Bake at 450 degrees F. for 10-15 minutes, or until dough is lightly browned.
  • 8. Turn upside down on serving plate and top with slices of cheese.
  • 9. Cut into wedges to serve.

Hamburger Pie

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 tsp salt
  • dash pepper
  • 1 pound can (2 cups) cut green beans, drained
  • 10 3/4 oz can condensed tomato soup
  • 5 medium tomatoes, cooked
  • 1/2 cup warm milk
  • 1 beaten egg
  • 1/2 cup shredded cheddar cheese

Directions

  • 1. In large skillet cook meat and onion until meat is lightly browned and onion is tender. Drain.
  • 2. Return meat mixture to pan. Add salt and pepper.
  • 3. Add drained beans and soup.
  • 4. Pour mixture into a greased 1 1/2 quart casserole.
  • 5. Mash potatoes while hot; add milk and egg.
  • 6. Season with salt and pepper.
  • 7. Spoon in mounds over casserole.
  • 8. Sprinkle with cheese.
  • 9. Bake at 350 degrees F for 25-30 minutes.

Inside Out Ravioli

Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 10-oz package frozen chopped spinach
  • 1 32 oz jar of spaghetti sauce with mushrooms
  • 1 8 oz can tomato sauce
  • 1 6 ox can tomato paste
  • 1/2 tsp salt
  • dash pepper
  • 1 7 oz package shell or elbow macaroni, cooked and drained
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup soft bread crumbs
  • 2 well-beaten eggs
  • 1/4 cup salad oil

Directions

  • 1. Brown first 3 ingredients in a large skillet. Drain. Return to skillet.
  • 2. Cook spinach using package directions. Drain, reserving liquid; add water to make 1 cup.
  • 3. Add spinach liquid and next 5 ingredients to meat mixture.
  • 4. Simmer 10 minutes.
  • 5. Combine spinach with macaroni and remaining ingredients; spread in 13 x 9 x 2 inch baking dish.
  • 6. Top with meat sauce.
  • 7. Bake at 350 for 30 minutes.
  • 8. Let stand 10 minutes before serving.
