Quick Stuffed Green Peppers

We live in a day and age where there isn't a lot of time for cooking. Often both mother and father work, or there is only one parent in the household. After working all day, and having an evening filled with homework and family activities, no one wants to spend a long time in the kitchen. And even if you are living alone or don't have children in your home, you still may want to enjoy a homemade meal that doesn't take hours to make. Here are some quick hamburger casseroles to make that won't break the bank or make you have to spend all of your time in the kitchen! Enjoy!

Speedy Hamburger-Rice Casserole

Ingredients

  • 1/2 cup chopped onions
  • 1 Tbsp butter or margarine
  • 1/2 lb ground beef
  • 1 can condensed vegetable soup
  • 3/4 cup water
  • 1 tbsp catsup
  • 1 tbsp mustard
  • 1/4 tsp salt
  • dash pepper
  • 1 1/4 cup water
  • 1 cup instant rice

Directions

  • 1. Saute onions in butter until tender; add meat and cook until browned.
  • 2. Drain.
  • 3. Stir in soup, 3/4 cup water, catsup, mustard, salt, and pepper.
  • 4. Mix well.
  • 5. Bring to a boil, reduce heat, and simmer 15 minutes.
  • 6. While meat is simmering, bring 1 1/4 cup water to a boil in a saucepan and cook rice according to package directions.
  • 7. Stir cooked rice into meat mixture; spoon into a baking dish and put under the broiler 3-5 minutes or until bubbly.

Vegetable Beef Casserole

Ingredients

  • 1 lb ground beef
  • 1 20 oz pkg frozen peas
  • 4 Tbsp chopped onion
  • 1 cup chopped celery
  • 1 can cream of mushroom soup
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 3 Tbsp canned milk
  • 2 cup crushed potato chips

Directions

  • 1. Brown ground beef until thoroughly cooked; drain.
  • 2. Spread cooked ground beef in bottom of baking dish.
  • 3. In large bowl, combine peas, onions, celery, soup, salt and pepper.
  • 4. Pour mixture over beef.
  • 5. Sprinkle with crushed potato chips.
  • 6. Bake at 350 degrees F for 30 minutes.

Chinese Casserole

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cup cooked rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 tbsp soy sauce
  • 1 can Chinese noodles

Directions

  • 1. Brown ground beef and onions until meat is well browned and onions are tender. Drain.
  • 2. In a large bowl, combine rice, cream of chicken soup, cream of mushroom soup, and soy sauce.
  • 3. In bottom of casserole dish, sprinkle half the Chinese noodles.
  • 4. Spread meat-onion mixture over noodles.
  • 5. Top with soup mixture.
  • 6. Sprinkle remaining noodles over top.
  • 7. Bake at 350 degrees F for 10-15 minutes, or until bubbly hot.

Mushroom Soup Casserole

Ingredients

  • 1 lb ground beef
  • 1 can cream of mushroom soup
  • 1/4 cup milk
  • 1/2 cup mushrooms
  • 1/2 cup onion, chopped
  • 1 cup sour cream
  • 4 oz cooked noodles

Directions

  • 1. Brown ground beef until done. Drain off grease.
  • 2. Stir in cream of mushroom soup, milk, mushrooms, onions, sour cream, and noodles.
  • 3. Simmer, covered, for 5-8 minutes. Serve immediately.

Best Oven Hash

Ingredients

  • 2 cups ground cooked beef
  • 2 cups cubed cooked potatoes
  • 1/2 cup mince onion
  • 1/2 cup snipped parsley
  • 2 tsp salt
  • dash pepper
  • 4 tsp Worcestershire sauce
  • 12 oz can evaporated milk
  • 1/2 cup fine dry bread crumbs
  • 2 tbsps butter or margarine, melted.

Directions

  • 1. Lightly mix first 8 ingredients.
  • 2. Turn into a 2 quart casserole.
  • 3. Mix bread crumbs and butter; sprinkle over top.
  • 4. Bake at 350 for 30 minutes or until hot.
