Easy Taco Pie

One of my favorite ways to eat beef is spiced up Mexican style. So here are some recipes that either resemble tacos in some way or have Mexican flavoring to them. Hope you enjoy these yummy hamburger casserole taco flavored recipes!

Mexican Hash

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped (about 1/2 cup)
  • 1 clove garlic, chopped
  • 2 medium tomatoes, chopped (about 2 cups)
  • 1 medium pepper, chopped (about 1 cup)
  • 1/4 cup raisins
  • 1 1/2 tsp salt
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1/4 cup slivered almonds
  • 1/4 cup sliced pimiento-stuffed olives
  • 3 cups hot cooked rice

Directions

  • 1. Cook and stir ground beef, onion and garlic in 10-inch skillet until beef is light brown. Drain
  • 2. Add tomatoes, green pepper, raisins, salt, cinnamon, and cloves.
  • 3. Cover and simmer 10 minutes.
  • 4. Cook and stir almonds over medium heat until golden, 2 to 3 minutes.
  • 5. Stir almonds and olives into beef mixture.
  • 6. Serve with rice.

Tortilla Casserole

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped (about 1/2 cup)
  • 1 jar (8 oz) green Mexican salsa
  • 1/2 cup dairy sour cream
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1 jar (2 oz) sliced pimientos
  • 6 corn tortillas, cut into 1-inch strips
  • 2 cups shredded Cheddar cheese (8 oz)

Directions

  • 1. Cook and stir ground beef and onion until beef is brown; drain.
  • 2. Spread 1/2 cup of the salsa in bottom of ungreased square baking dish, 8x8x2 inches
  • 3. Mix remaining salsa, the sour cream, soup and pimientos.
  • 4. Layer half of the tortilla strips,beef mixture, soup mixture and cheese on salsa; repeat
  • 5. Bake uncovered in 350 degree oven until casserole is hot and bubbly, about 30 minutes.
  • 6. Let stand 10 minutes. Garnish with olives if desired.

Microwave Mexican Casserole

Ingredients

  • 1 pound lean ground beef
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 can (10 3/4 oz) condensed cream of onion soup
  • 1 can (4 oz) chopped green chili peppers
  • 1 cup mild taco sauce
  • 1 package (6 1/4 oz) corn chips
  • 2 cups shredded Cheddar or Monterrey Jack cheese
  • 1/4 cup chopped black olives

Directions

  • 1. Place ground beef in 2-quart glass measure cup or casserole dish
  • 2. Break up with a fork.
  • 3. Add onion and garlic.
  • 4. Use HIGH cycle and cook for 7 minutes, or until beef is no longer red and onion is transparent.
  • 5. Stir to break up meat. Drain.
  • 6. Stir in soup and peppers.
  • 7. In large oval micro-type casserole, place about 2 cups corn chips.
  • 8. Layer each half of the meat mixture, with taco sauce, and cheese. Repeat.
  • 9. Use medium cycle (5) and cook 12 to 14 minutes, or until heated through.
  • 10. Sprinkle with remaining corn chips and olives. Let stand 3 minutes before serving.

Taco Chili

Ingredients

  • 1 pound ground beef
  • 1 1.2 oz package taco seasoning mix
  • 2 15 oz cans chunky Mexican-style tomatoes
  • 1 15 oz can red kidney beans
  • 1 15 oz can whole kernal corn

Directions

  • 1. In a large skillet cook ground beefuntil brown. Drain fat.
  • 2. In a 3 1/2 to 4 quart slow cooker combine the cooked ground beef, taco seasoning mix, undrained tomatoes, undrained beans, and undrained corn. Cover and cook on low-heat setting for 4 to 6 hours or on high-heat setting for 2 to 3 hours.

Taco Soup with Whole Tomatoes

Ingredients

  • 1 lb ground beef
  • 1/2 cup chopped onions
  • 28 oz can whole tomatoes with juice
  • 14 oz can kidney beans with juice
  • 17 oz can corn with juice
  • 8 oz can tomato sauce
  • 1 pkg dry taco seasoning
  • 1-2 cups water
  • salt to taste
  • pepper to taste
  • 1 cup grated cheddar cheese
  • taco or corn chips

Directions

  • 1. Brown beef and onions in skillet. Drain.
  • 2. Combine all ingredients except cheese and chips in slow cooker.
  • 3. Cover. Cook on Low 4-6 hours.
  • 4. Ladle into bowls. Top with cheese and serve with chips.

Sante Fe Soup with Melted Cheese

Ingredients

  • 1 lb Velveeta cheese, cubed
  • 1 lb ground beef, browned and drained
  • 15 1/4 oz can corn, undrained
  • 15 oz can kidney beans, undrained
  • 14 1/2 oz can diced tomatoes with green chilies
  • 14 1/2 oz can stewed tomatoes
  • 2 tbsp dry taco seasoning
  • corn chips, or soft tortillas

Directions

  • 1. Combine all ingredients except chips or tortillas in slow cooker.
  • 2. Cover. Cook on High 3 hours.
  • 3. Serve with corn chips as a side or dip soft tortillas in individual servings in soup bowls.

Tex Mex Meatloaf

Ingredients

  • 1 large egg
  • 1 tbsp molasses
  • 2 tbsp tomato paste
  • 1 tbsp Dijon mustard
  • 1/4 tsp Worcestershire sauce
  • 1 tsp chili powder, or to taste (I like more)
  • Hot sauce to taste
  • 1 tsp dried thyme
  • salt and freshly ground black pepper to taste
  • 1 1/2 pounds ground beef
  • 1/2 cup fresh bread crumbs
  • 1 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 carrot, grated
  • 1/2 cup cooked kidney beans, drained and patted dry

Directions

  • 1. Preheat ove to 350 degrees
  • 2. In a mixing bowl, beat the egg and blend in the molasses, tomato paste, mustard, and Worcestershire sauce until thoroughly combined.
  • 3. Blend in the chili powder, hot sauce, thyme, salt, and pepper.
  • 4. Mix in the ground beef, bread crumbs, onion, garlic, and carrot, and blend well.
  • 5. Carefully mix in the kidney beans to avoid mashing them.
  • 6. Place the mixture in an oiled 9 x 5 x 3 inch loaf pan and press down lightly.
  • 7. Bake for 45 minutes to 1 hour, until firm and browned.
