Ground Beef Casserole Recipes
Ground beef is inexpensive, tasty and full of protein. It mixes well with a variety of
other ingredients so there are plenty of ways you can turn it into a tasty dinner that your

Easy Mexicali Dinner
Ingredients
- 1 pound ground beef
- 1/2 cup chopped onion
- 6 oz (3 cups) medium noodles, cooked and drained
- 1 pound can of diced tomatoes
- 1 (6 oz) can tomato paste
- 1 1/2 cup shredded sharp cheese
- 1/2 cup sliced ripe olives
- 1 teaspoon salt
- 1/4 teaspoon dried basil, crushed
- 1/8 tsp pepper
Directions
- 1. Cook meat and onion in large skillet until onion is tender.
- 2. Stir in noodles, tomatoes, tomato paste, 1 cup shredded cheese, olives and seasonings
- 3. Turn into 2 quart casserole
- 4. Top with remaining 1/2 cup shredded cheese.
- 5. Bake at 350 degrees for 45 minutes.
- 6. Makes 6 servings.
Hamburger Casserole for Crock Pot
Ingredients
- 2 large size ptoatoes, sliced
- 2 to 3 medium carrots, sliced
- 1 can peas, well drained
- 3 medium onions, sliced
- 1 1/2 pound lean ground beef, browned, drained, and rinsed
- 1 (10 oz) can tomato soup
- 1 (10 oz can water
Directions
- 1. Place layers of vegetables with potatoes on the bottom.
- 2. Season each layer with salt and pepper.
- 3. Place lightly browned ground beef on top of the celery.
- 4. Mix the tomato soup with the water and pour into a crock pot.
- 5. Cover and set to LOW for 6 to 8 hours (HIGH: 2 to 4 hours, stirring occasionally).
- 6. Ingredients may be increased by half for the 5 quart model.
Italian Beef and Potato Casserole
Ingredients
- 1 1/2 lb ground chuck
- 1 1/2 cup chopped onions
- 2 cloves garlic, minced
- 1 (32 oz) jar spaghetti sauce
- 1/3 cup water
- 1 tsp dried whole basil
- 1 tsp dried whole oregano
- 1/4 tsp pepper
- 4 medium potatoes, peeled and thinly sliced
- 2 cup (8 ox) shredded Mozzarella cheese
Directions
- 1. Cook ground chuck, onions and garlic in a large skillet over medium heat until meat is browned,
stirring to crumble meat. Drain
- 2. Add spaghetti sauce, water, basil, oregano, and pepper, stirring well.
- 3. Spoon 1/3 of meat mixture into a lightly greased 13x9x2 baking dish.
- 4. Top with half of potato slices.
- 5. Cover with 1/3 of meat mixture.
- 6. Add remaining potato slices and remaining meat mixture.
- 7. Cover with aluminum foil.
- 8. Bake at 375 degrees for 1 hour or until potatoes are tender
- 9. Remove foil and sprinkle cheese over casserole.
- 10. Bake an additional 5 minutes or until cheese melts.
- 11. Let casserole stand 10 minutes before serving.
Stuffed Cabbage Rolls
Ingredients
- 12 cabbage leaves
- 1 pound ground beef
- 1/2 cup uncooked instant rice
- 1 can (15 oz) tomato sauce
- 1 tsp salt
- 1/8 tsp pepper
- 1/8 tsp garlic salt
- 1 can (4 oz) mushroom stems and pieces, undrained
- 1 tsp sugar
- 1/2 tsp lemon juice
- 1 tbsp cornstarch
- 1 tbsp water
Directions
- 1. Cover cabbage leaves with boiling water. Cover and let stand until leaves
are limp, about 10 minutes. Remove leaves; drain.
- 2. Mix ground beef, rice, 1/2 cup of the tomato sauce, the salt, pepper, garlic salt, onion and mushrooms
- 3. Place about 1/3 cup beef mixture at stem end of each leaf.
- 4. Roll leaf around beef mixture, tucking in sides.
- 5. Place cabbage rolls, seam sides down, in ungreased square baking dish, 8x8x2 inches
- 6. Mix remaining tomato sauce, the sugar, and lemon juice; pour over cabbage rolls.
- 7. Cover and bake in 350 degree oven until beef is done, about 45 minutes.
- 8. Pour the liquid from cabbage rolls into 1-quart saucepan.
- 9. Mix cornstarch and water; stir into cabbage liquid.
- 10. Heat to boiling, stirring constantly.
- 11. Boil and stir 1 minute.
- 12. Serve sauce with cabbage rolls.
- 13. Four servings.
Impossible Cheeseburger Pie
Ingredients
- 1 pound ground beef
- 1 1/2 cups chopped onion
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups milk
- 3 eggs
- 3/4 cup buttermilk baking mix
- 2 tomatoes, sliced
- 1 cup shredded Cheddar
Directions
- 1. Heat oven to 400 degrees.
- 2. Grease pie plate, 10 x 1 1/2 inches.
- 3. Cook and stir gorund beef and onion over medium heat until beef is brown; drain.
- 4. Stir in salt and pepper.
- 5. Spread in pie plate.
- 6. Beat milk, eggs, and baking mix until smooth, 15 seconds in blender on high or 1 minute with hand beater.
- 7. Pour into pie plate
- 8. Bake 25 minutes until knife inserted in center comes out clean, 5 to 8 minutes longer.
- 9. Cool 5 minutes.
