Mom's Famous Hamburger Stew

Hamburger meat is inexpensive, tasty, full of protein and versatile. Check out the recipes below for some easy recipes using hamburger meat that you can try for dinner.

Goulash Paprikash

Ingredients

  • 2 lb ground beef
  • 1 1/2 tsps salt
  • 2 1/2 tbsps flour
  • 1 tbsp paprika
  • 1/4 tsp pepper
  • 2 tbsps vegetable oil
  • 1/2 cup sliced onion
  • 1 1-pound can tomatoes
  • 2 tbsps cold water

Directions

  • 1. Sprinkle beef with 1 tsp salt.
  • 2. Shape in 6 -1” thick patties.
  • 3. Combine 1 tbsp flour with paprika, and 1/2 tsp salt and pepper. Mix well. Coat patties lightly with this mixture.
  • 4. In large saucepan on high, heat oil and brown onion.
  • 5. Remove onion with slotted spoon, in same pot, brown patties both sides, adding more oil if necessary. Remove from heat. Drain off excess fat.
  • 6. Reduce heat to moderate. Stir in tomatoes. Bring to boil. Blend remaining 1 1/2 tbsp flour with cold water and stir into simmering mixture, loosening and browned bits in the bottom of the pot. Add onions and patties.
  • 7. Cover and simmer 1/2 hour. Serve with buttered poppy seed noodles. Serves 6.

Cajun Hamburger and Hash Brown Skillet

Ingredients

  • 1 pound ground beef
  • 2 boxes Betty Crocker Hash Browns
  • 1-2 medium onions, chopped
  • 1 cup shredded cheddar cheese
  • Cajun spice

Directions

  • 1. In a large skillet, brown ground beef. Drain fat and add onions.
  • 2. Cover and let steam about 5 minutes over medium heat.
  • 3. Add hash browns according to box instructions.
  • 4. Cover until hash browns are almost done (about 15 minutes over medium heat).
  • 5. Sprinkle cheddar cheese and desired amount of Cajun spice over mixture.

Savory Sloppy Joe's

Ingredients

  • 1 pound ground beef
  • 1 cup barbecue sauce
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 8 hamburger buns
  • Velveeta cheese, sliced

Directions

  • 1. Brown meat, drain and rinse.
  • 2. Stir in sauce, green pepper, onion and cook for 15 minutes or longer.
  • 3. Cover top halves of buns with cheese slices and broil until cheese melts.
  • 4. Spoon meat mixture on bottom halves of buns; serve with top half of buns.

Barbecups

Ingredients

  • 12 Pillsbury tenderflake biscuits
  • 1 pound ground beef, browned and drained
  • 1 tablespoon minced onion
  • 2 tablespoons brown sugar
  • 1/2 cup barbecue sauce
  • grated sharp cheddar cheese

Directions

  • 1. Mix together ground beef, onion, brown sugar and barbecue sauce.
  • 2. Press a tenderflake biscuit into each muffin cup.
  • 3. Fill each cup with mixture, then top with sharp cheddar cheese
  • 4. Bake 10 to 12 minutes in 400 degree oven.

Spanish Rice

Ingredients

  • 1 pound ground beef
  • 1/2 green pepper, chopped
  • 1 large onion, chopped
  • 4 ripe olives, chopped
  • 1 1/3 cups rice,raw quick cooking
  • 1 3/4 cups water
  • 1 (8 oz) can tomato paste
  • 1 (8 oz) can tomatoes
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 tsp prepared mustard

Directions

  • 1. Heat skillet.
  • 2. Brown beef, drain, and rinse
  • 3. Add pepper, onion, olives, and rice.
  • 4. Stir and cook 10 minutes.
  • 5. Add all remaining ingredients.
  • 6. Mix and stir.
  • 7. Bring to a boil.
  • 8. Cover tightly.
  • 9. Reduce heat and let simmer 10 minutes.

Pizza By the Yard

Ingredients

  • 1 unsliced loaf french bread
  • 1 6 oz can tomato paste
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped onion
  • 1/2 tsp oregano
  • 3/4 tsp salt
  • dash pepper
  • 1 lb ground beef
  • 2 tomatoes sliced
  • 1 green pepper cut into rings (optional)
  • 4 oz grated sharp cheese
  • 4 slices mozzarella cheese

Directions

  • 1. Cut loaf in half.
  • 2. Mix tomato paste, parmesan cheese, onion, oregano, salt, pepper and raw ground beef.
  • 3. Spread beef mixture on each half of the loaf.
  • 4. Bake at 400 degrees 20 to 25 minutes.
  • 5. Then remove from oven and add tomatoes, peppers and cheese.
  • 6. Return to oven and bake until cheese melts.

Potato Burgers Quick Meal

Ingredients

  • 2 cups shredded raw potatoes
  • 1 pound ground beef
  • 2 tablespoons finely chopped onions
  • 1/2 tsp pepper
  • 1/2 tsp salt

Directions

  • 1. Mix together ingredients.
  • 2. Shape into patties.
  • 3. Put 2 tablespoons shortening in skillet
  • 4. Use medium heat until brown turn and brown until done about 12 to 15 minutes.
  • 5. Remove to platter.
  • 6. Add 2 tablespoon flour, milk and water to drippings.
  • Stir until smooth and serve with burgers.

Zesty Meatballs

Ingredients

  • 3 pounds ground beef
  • 3 medium onions chopped
  • 1 1/2 cups soft bread crumbs
  • 1 1/2 teaspoon salt
  • 3/4 tsp pepper
  • 1 1/2 tsp chili powder
  • 1/4 cup plus 2 tablespoon milk
  • vegetable oil
  • 3/4 cup Worchestire sauce
  • 3/4 cup sugar
  • 1/4 cup plus 2 tablespoon vinegar
  • 3 (8 oz) cans tomato sauce
  • Parsley flakes

Directions

  • 1. Combine first 7 ingredients
  • 2. Mix well and shape into 1-inch balls.
  • 3. Cook meatballs in hot oil until lightly brown. Drain.
  • 4. Place meatballs in 13 x 9 x 2 baking pan.
  • 5. Combine remaining ingredients in pan, bring to boil.
  • 6. Cook over low heat for 1 minute stirring constantly.
  • 7. Pour sauce over meatballs.
  • 8. Bake at 325 degrees for 30 minutes.
  • 9. Serve with spaghetti, macaroni, or noodles.
