My Favorite Casseroles with Hamburger Meat
Hamburger is inexpensive, nutritious and mixes well with a variety of ingredients.
Here are five of my favorite casseroles with hamburger meat recipes.
7 Layer Casserole
Ingredients
- 1 cup uncooked rice
- 1 cup whole kernel corn
- Salt and pepper
- 2 15 oz cans tomato sauce
- Water
- 1 cup chopped onion
- 1 cup chopped green pepper
- 1 1/2 pounds hamburger, browned and drained
- 4 strips of bacon
Directions
- 1. Use one greased glass casserole (9 x 9)
- 2. Pour in 1 cup rice
- 3. Pour in 1 cup whole kernel corn
- 4. Sprinkle with salt and pepper
- 5. Pour 1 can of tomato sauce and 1/2 can water over corn
- 6. Layer 1 cup of onion and 1 cup of green pepper
- 7. Layer the ground beef
- 8. Sprinkle with salt and pepper
- 9. Pour second can of sauce and 1/4 can of water over top
- 10. Layer 4 strips of bacon over top
- 11. Cover with foil and bake at 350 for 1 hour
- 12. Uncover and bake 25-30 minutes longer or until bacon is crisp.
Lasagna
Ingredients
- 1 pound ground beef
- 1 clove minced garlic or 2 tsp garlic powder
- 1 tbsp Italian seasoning
- 1 tsp salt
- 2 cups canned tomatoes (16 oz)
- 1 1/3 cup tomato paste (2 6 oz cans)
- tsp parsley flakes
- 2 beaten eggs
- 1 lb mozzarella
- 10 oz lasagna noodles
- 3 cups ricotta cheese
- 1/2 cup grated parmesan cheese
- Black pepper to taste
Directions
- 1. Brown ground beef, drain and rinse. Return to pan.
- 2. Add garlic, Italian seasoning, salt, tomatoes, tomato paste and pepper.
- 3. Let simmer for 30 minutes or until good sauce consistency.
- 4. While this is simmering (uncovered) cook lasagna noodles in pan according to
package directions. Then place in strainer and drain well.
- 5. Then mix eggs, parsley flakes, parmesan cheese, and ricotta cheese in bowl with spoon. Set aside.
- 6. In bottom of 13 x 9 x 2 pan, place half of cooked noodles, then 1/2 of ricotta cheese mixture,
then 1/2 of meat sauce mixture and 1/2 of mozzarella cheese.
- 7. Repeat these steps.
- 8. Place in oven at 375 degrees and bake for 30 minutes.
- 9. After baking let set on top of stove 10 minutes before slicing
- 10. To reheat any leftovers, return to 375 degree oven and heat for 50 minutes.
- 11. Freezes well.
Shortcut Manicotti
Ingredients
- 1/2 pound lean ground beef
- 1/2 of a 16 oz can (1 cup) refried beans
- 1 tsp oregano
- 1/2 tsp ground cumin
- 8 manicotti shells
- 1 8 oz can picante or taco sauce
- 1 8 oz carton sour cream
- 1/4 cup green chopped onions
- 1/4 cup sliced pitted ripe
- 1/2 cup (4 oz) shredded Monterey Jack cheese
Directions
- 1. Combine first 4 ingredients. Mix well.
- 2. Spoon into uncooked shells until full.
- 3. Arrange in a 13” x 9” x 2” baking dish.
- 4. Combine picante or taco sauce and 1 1/4 cups water; pour over manicotti.
- 5. Cover with vented microwave safe plastic wrap.
- 6. Micro-cook once at 100% power (high) 10 minutes.
- 7. Give dish 1/2 turn once, then turn manicotti over with a fork.
- 8. Cook, covered, on 50% power 17-19 minutes or until pasta is tender, give dish half-turn once.
- 9. Combine sour cream and olives and green onion.
- 10.Spoon over pasta; top with cheese. Cook, uncovered, on high 2-3 minutes or until cheese melts.
- Serves 4.
Speedy Shepherd's Pie
Ingredients
- 12 ounces extra-lean ground beef
- 1/2 cup chopped onion
- 1 cup each sliced baby carrots and frozen baby peas
- 1/2 cup low-sodium beef broth
- 2 cups prepared instant potato flakes (prepared according to package directions)
- Dash Paprkia
Directions
- 1. Preheat oven to 375 degrees
- 2. In 10” nonstick skillet cook beef over medium heat, stirring with a wooden spoon
to break up meat, 3-4 minutes, until no longer pink.
- 3. Add onion; cook, stirring constantly, until onion is softened, 2-3 minutes.
- 4. Add carrots and peas; continue to cook and stir until vegetables are tender, about 5 minutes.
- 5. Add broth; bring mixture to a boil. Reduce heat to low; let simmer until most of the liquid
is absorbed, about 10 minutes.
- 6. Transfer mixture to 1 1/2 qt casserole.
- 7. Top mixture with prepared potato flakes, spreading and fluffing with fork;
- 8. Sprinkle with paprika. Bake until heated through, 15-20 minutes.
Talgliarini
Ingredients
- 1 onion, cut fine
- 1 clove garlic
- 2 pounds ground beef
- 4 tbsp oil or butter
- 16 oz tomato sauce
- 2 tsp salt
- 18 oz pkg noodles
- 16 oz whole kernel corn
- 14 oz mushrooms
- 1 lb grated sharp cheese
Directions
- 1. Brown onion in oil, add beef and garlic. Drain if necessary (if you don't use lean ground beef).
- 2. Combine tomato sauce, salt and noodles; cover with water and cook till tender.
- 3. Mix all ingredients together except cheese and place in casserole.
- 4. Cover liberally with cheese.
- 5. Bake at 350 degrees about 30 minutes.
- 6. Serves 12.
