Scrambled Egg Sandwich Casserole

Award Winning Crab Casserole

Ingredients

  • 1 lb. Crab Meat
  • 1 1/2 cups bread crumbs
  • 1/2 cup milk
  • 1 cup mayonnaise
  • 1 Tbsp. onion, chopped
  • 6 boiled eggs, chopped
  • 1 Tbsp. Worcestershire sauce
  • Dash of hot sauce

Bake at 350 degrees F for 20 to 25 minutes.

Award Winning Tuna Casserole

Ingredients

  • 2 cups tuna
  • 3 hard boiled eggs
  • 2 celery ribs
  • 1 onion
  • 1/2 cup frozen peas, thawed
  • 1/2 cup frozen green beans, thawed
  • 2 cups cooked egg noodles
  • 1 1/2 cups crushed potato chips
  • 1 can low fat cream of mushroom soup
  • 1 can low fat cream of celery soup

Directions

  • 1. Drain the tuna. Chop the eggs into 1/4 inch pieces. Chop the celery and onion into 1/4 inch pieces.
  • 2. Combine all ingredients except 1/2 cup chips. Put mixture in slow cooker, cover with remaining chips. Cook on low for 6 to 8 hours.

Award Winning Ham Casserole - serves 6

Ingredients

  • 1/2 lb. Velveeta cheese spread,cubed
  • 1/2 cup milk
  • 3 cups diced cooked potatoes
  • 3/4 cup cubed cooked ham
  • 6 hard-cooked eggs, sliced
  • 1/4 cup chopped green pepper
  • 1/2 tsp. salt

Directions

  • 1. Heat Velveeta with milk over low heat; stir until sauce is smooth.
  • 2. Add remaining ingredients; mix well.
  • 3. Heat thoroughly, stirring occasionally.
  • 4. Serve when warmed through

Award Winning Tater-Tot Casserole - serves 6

Ingredients

  • 1 lb ground beef
  • 2 cups chopped broccoli, freshly steamed
  • 1 (2 7/8 ounce) can durkee French fried onion rings (or 1 1/2 cups)
  • 1 (10 ounce) can cream of celery soup
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 2 Italian tomatoes, chopped
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon seasoning salt
  • seasoned pepper
  • 1 (24 ounce) bag frozen potato slices or tater tots

Directions

  • 1. Line an 8x12-inch casserole, or 7x11-inch pan with the potato rounds, on the bottom and sides .
  • 2. Bake 10 minutes at 400°F.
  • 3. Brown beef.
  • 4. Add broccoli, tomatoes, HALF the onion rings, and add to the cooked ground beef and spread on top of cooked tater tots.
  • 5. Mix soup, milk, half the cheese and seasonings and pour over beef mixture.
  • 6. Fill casserole dish and bake covered (or it will dry out) at 400°F for 20 minutes.
  • 7. Remove cover and add rest of cheese and dried onions.
  • 8. Let rest couple minutes for the cheese to melt. Then serve

Award Winning Cheesy Chicken and Rice Casserole

Ingredients

  • 1 can (10 ¾ oz) Campbell’s Healthy Request Cream of Chicken Soup
  • 1 1/3 cups water
  • 3/4 cup uncooked long-grain white rice
  • 1/2 tsp onion powder
  • 2 cups fresh or frozen vegetables
  • 4 skinless, boneless chicken breast halves
  • 1/2 cup reduced fat shredded Cheddar cheese

Directions

  • 1. Stir soup, water, rice, onion powder and vegetables in 12 x 8” shallow baking dish.
  • 2. Top with chicken. Season chicken as desired. Cover.
  • 3. Bake at 375 degrees for 45 minutes or until done. Top with cheese
